Today is a special day, so I need to tell my wife, “Happy Valentine’s Day, sweetheart.”
I know it is a bit strange to put a Valentine’s Day message into a blog about health, but it fits. My loving wife has put up with me and my strange eating kicks for years. We went through many calorie restrictive diets and lots of years of me trying to find the right way to eat that could be sustainable for a long and healthy life. Now that I have found it, things are topsy turvy in the kitchen. Which is all the more reason to be thankful to and for my loving wife.
It has been difficult to change the way she prepares meals after cooking. I used to be the least picky eater asking only that meat always be the main dish. Now I place the most demands on her culinary skills asking that meat not touch my plate. My wife said that it was easy to make meals when I would eat anything. Now, she needs to think, prepare, and chop, chop, chop beforehand instead of just throwing something together.
My wife has made all the big shopping and cooking changes because we plan on being together forever. She has put together meals with all our family’s different tastes in mind. She has done it all because she loves us. That is why it makes sense to give a special thank you to the love of my life.
Thank you for putting up with me. Happy Valentine’s Day sweetheart.
