Quinoa Fruit Salad with Honey Lime Dressing · 27 February 2013
Ingredients:
1 cup quinoa
2 cups water
Pinch of salt
For honey lime dressing:
Juice of 1 large lime
3 tablespoons honey
For the Fruit:
1 ½ cup blueberries
1 ½ cup sliced strawberries
1 ½ cup chopped mango
¼ cup chopped nuts (almonds, walnuts)
½ cup craisins
½ cup figs
Directions:
Rinse the quinoa with cold water in a strainer. Put the water, salt, and quinoa in a saucepan and bring to a boil for 5 minutes. Simmer until the water is absorbed. Then, remove from heat, fluff, and let the quinoa is cool to room temperature. Whisk the lime juice and honey together in a small bowl. Combine the fruit and quinoa into a large bowl. Pour the dressing over the salad and serve chilled or at room temperature.
My wife found the original recipe at Two Peas and Their Pod and modified it. Naturally. The fruit salad is delicious and you can change the recipe by using different fruits that might be in season or that you might prefer.
The nuts add crunch while the craisins and figs add a chewy texture. The mixture has varied sensations for the mouth and taste buds. Overall though, I just thought it was yummy.
